Growing up, the first thing we would do when arriving to our Grandma's house would be to rush to the cellar and pick out a jar of her pickles. Since her passing, I tried every method of pickling that is out there and after a decade of trial and error, finally produced a pickle that brought me back to those days of younger. Fermentation seemed to be the key and the only way to transform a cucumber into an effervescent & delicious treat. This discovery brought me to research the benefits and incredible power of fermentation. We want to share this sense of nostalgia and good health with you every time you enjoy one of our products.
process
Lacto-fermentation is how we make our products. This old-world process has been utilized for centuries to preserve food and transform the flavors of common vegetables, fruits, dairy and even proteins. We apporach this in small batches and have found the right balance of salt in our brine to enhance flavor and slow down the fermentation.
LAB or lactic acid bacteria are present in all fruits and vegetables and when given the right resources; such as water, proper temperature, and salt, will spontaneously ferment and work to preserve the fruit or veggie. Along with this response come flavors that are deep and delicious as well as amazingly nutritious. After time spent with the correct comforts, the end result is a fermented fruit or veggie that is full of living probiotics and is prepared to last much much longer than it's fresh version.
Since these are living probiotic products, we never cook them nor add vinegar. These two factors would kill all of the magical benefits!
This is the same reason our fermented veggies should remain refrigerated. Chilling them, slows down fermentation to a near halt but when left out at warmer temperatures they will continue to ferment further. Flavor will change and pressure could build in the container which could cause a leak.
